This sample menu and shopping list are perfect for this week featuring spring rolls and perfect pork chops.

We are big fans of recipes that we don’t finish in one sitting and protein is leftover for more meals later in the week. This week we take our leftover pork and turn it into a simple fried rice that comes together quickly with minimal effort.

Spring Rolls Thai Peanut Sauce

This recipe calls for simple ingredients in most pantries. A bit of peanut butter and lime juice combined with soy sauce and you are well on your way to a sauce!

Prep Time10 mins

 ½ cup Creamy Peanut butter
 2 tbsp Madhava Coconut cane sugar
 1 tbsp Rice wine vinegar or lime juice
 4 Cloves Garlic, mashed
 1 tbsp Gluten-free Tamari or Soy sauce
 2 tbsp Water, or more to thin

Whisk all ingredients except water until combined.

Add water until desired consistency is reached.

Serve with spring rolls, chicken lettuce wraps or satay.

Ingredients

Directions

Whisk all ingredients except water until combined.

Add water until desired consistency is reached.

Serve with spring rolls, chicken lettuce wraps or satay.

Thai Peanut Sauce

Perfect Pork Chops

Yields6 Servings

 4 Boneless Pork chops, thick, center cut
 1 tbsp Madhava coconut cane sugar
Flour mixture
 ¼ cup Whey protein
 2 tbsp Coconut flour
 2 tsp Sea salt
 2 tsp Dry Parsley
 1 tsp Fresh ground pepper
 1 tsp Garlic salt
 1 tsp Smoked paprika

Pat dry and salt, pepper and sugar pork chops and bring to room temperature.

Prepare dredging flour by mixing flour, whey and spices.

Brown four tablespoons of butter in pan over medium heat.

Dredge seasoned pork chops in flour mixture. Brown in butter in pan.

Cook until browned on each side. While browning, start oven at 400 degrees. Line baking sheet with foil and lay metal rack inside.

Place browned chops on rack and bake for 25 minutes.

Remove from pan and serve immediately with asparagus and cauliflower mashed potatoes.
