Weekly at Mor offers simple weeknight dinner options with clean-eating, low-carb diners in mind.
This weekend we began our meal prep for all the meals ahead. Chopping onions, garlic and scallions, for instance, saves us time when dinner rolls around and we are starving.
We have been meaning to throw together a white chicken chili and this bitter midwestern weather is a perfect opportunity to do it. You’ll also see a standby favorite on this week’s menu: fried rice (with cauliflower, of course!)
We decided at least one night each week we can support our local restaurants and this week it lands on Monday AND Saturday. Partially inspired by Valentine’s Day this week, we may splurge on marbled beef or crab for weekend festivities.
