Make and eat good food with us.

This week we went for protein variety. On Monday, we have all-in-one-sheet pan mahi mahi with beans for a super easy prep and clean up experience. The perfect way to start the week, we think!

Towards the end of the week we have slow-cooked braised short rib potpies, which sound complicated but can really be started at lunch and finished for dinner (we are going to try to make them the day before and just put them in the oven day of and reheat to really meld all the flavors).

In the middle of the weekly plan, we are making pork and chicken. Creamy cauliflower and chicken with spinach in a one-dish meal will be easy enough for a busy mid-week workday meal. And who doesn’t love pork kebobs (served as almost a salad on romaine)?
