Weekly at Mor offers simple weeknight dinner options with clean-eating, low-carb diners in mind.
This week we are having breakfast for dinner and sharing a new way to serve salmon (in a bowl).
Keep in mind rice and potatoes are not keto and we highlight our substitutions. For instance, we have cauliflower rice in the rotation to serve alongside traditional jasmine or basmati rice for non-keto eaters. And rutabaga is a perfect substitute for (or to serve alongside) potatoes.
Plus, while we might be past St. Patrick’s Day festivities, we couldn’t help but add a Brussel sprout sauté with a slab of bacon later in the week.
But you do you and share what you come up with. Oh, and don’t forget to tell us about it and give us a follow on Instagram.
Here’s the menu I have planned:
Monday (March 22):
Keto Cream Cheese Pancakes
Tuesday (March 23):
Sauteed Cabbage and Brussel Sprouts
Wednesday (March 24):
Furikake Salmon Bowl
Thursday (March 25) Dinner:
Herb Butter Chicken & Rutabaga
