We’ve been waiting for the perfect recipe for our ripening bananas and today we found The Bojon Gourmet’s Paleo Banana Bread. We just had to try it.
Not nut-free but grain-free banana bread that’s also paleo, vegan, gluten-free, egg-free, cane sugar-free seemed impossible. Yet this recipe couldn’t have been easier and healthier.
Of course, we did make modifications along the way. One was sunflower seed flour (hand ground) instead of almond flour, which we ran out of yesterday.
Secondly, we use RX nut butter with egg whites and dates already mixed in, and that seemed perfect for this bread (although nixing the vegan qualification).
It was amazing. Moist and super flavorful as well as perfect warm with butter on the way to school (we made two snack-size loaves to make it easier to carry).
Next time around, we will go pure and maybe even use tahini for a completely nut-free bread.
